Badusha | Balushahi



Badusha in South India and Balushahi in North India is most popular sweet sold across the country. This is crispy and flaky outside, soft and juicy inside.  Mouthwatering sweet is made by frying maida mixed with ghee & curd in oil & soaking them in warm sugar syrup.  Enjoy this amazing sweet for this Diwali!!!

Ingredients :
  1. All purpose flour - 2 cups (250 gms)
  2. Baking powder - 1/2 tsp
  3. Baking soda - 1/4 tsp
  4. Ghee (or butter) - 50 gms
  5. Curd - 100 gms
  6. Oil for frying
  7. Sugar - 1 1/2 cups
  8. Water - 1 1/2 cups
  9. Cardamom - 3 nos
  10. Lemon juice - 1/2 tsp
  11. Saffron - a pinch

Method :

1.   Mix together flour, baking powder, baking soda and ghee to crumbly texture.

2.  Add curd to the flour mixture and make a dough.  Don't over knead the dough.  All the dough to rest for half an hour.  

3.   In a pan, add sugar and water and allow the sugar to get dissolved in the water.   Cook the sugar syrup to one string consistency.  Add lemon juice, cardamom and saffron and switch off the flame.

4.   Take a small portion of the dough and make a ball.  Flatten the balls lightly and make a depression in the center using your thumb.

5.  Heat oil in the deep frying pan and fry the badusha till done or golden brown colour.  

6.   Put the badusha in the warm sugar syrup for 2 to 3 mins.  Remove from the syrup and bring it to room temperature and store them in airtight container.
