Tomato Jam

My mother make this sweet tomatoes for a sweet ending for the tasty biryani.  It taste absolute delicious with breads too. I like to have this with curd rice sometimes.  It's yummy :)

Ingredients :
  1. Tomatoes - 1 lb
  2. Sugar to taste (I used 1 1/2 cups)
  3. Ghee - 1 tsp
  4. Broken cahewnuts - 1 tsp
  5. Cardamom powder - 1/4 tsp

Method :

1.   Chop the tomatoes into quarters.

2.   Heat the pan, add the tomatoes & sugar together.  Cook till tomatoes are totally cooked & smashed.

3.   Meanwhile, roast the cashewnuts in the ghee & keep aside.

4.   Add the cardamom powder & the roasted cashewnuts to the sweet tomatoes.

Mexican Wedding Cakes / Cookies

These cookies are so good that at least three different countries claim them as their own; although I always knew them as Mexican Wedding Cakes, they’re apparently also known as Russian Tea Cakes and Italian Butter Nuts.  

If you haven’t tried them before, these cookies are very rich and shortbread-like, and though they’re coated in powdered sugar, they’re not too sweet. I know it looks like they don’t contain enough sugar, and like there isn’t enough liquid to make a good dough, but just trust the recipe.

Ingredients :
  1. Toasted nuts (walnuts / pecans / almonds) - 2/3 cup
  2. Butter - 1 cup
  3. Powdered sugar (icing sugar) - 1/4 cup
  4. Vanilla extract - 1 tsp
  5. All purpose flour - 2 cups
  6. Salt - 1/4 tsp
  7. Icicng sugar - 1 cup (for dusting)

Method :

1.   Preheat the oven at 175 C.  Prepare the baking pan.

2.   Beat the butter, powdered sugar, vanilla extract until light & fluffy.

3.   Sieve the flour & salt together.

4.   Now gradually add the flour & the nuts to the butter mixture gradually until well blended.

5.   Refrigerate the dough for atleast one hour or until firm.

6.  Shape the dough into 1-inch ball & place it in the baking sheets.  (leave atleast 1 1/2 inches space between each dough)

7.   Bake it for 15 mins or until light brown color in the corners.  Cool for 5 mins in the baking sheet.

8.  Roll the warm cookies in the icing sugar until evenly coated.  Cool completely & store it in the air tight container.

Spicy Vegetable paniyaram

Paniyaram is the most popular chettinad dishes.  Different variations exist & this time I made it little healthy by adding grated vegetables.  I like to serve this with coconut chutney or any spicy chutneys.  Perfect for kids :)

Ingredients :
  1. Idli / Dosa batter - 1 cup
  2. Onion - 1 no
  3. Tomato - 1 no
  4. Green chillies - 2 nos
  5. Red chilly powder - 1/2 tsp (optional)
  6. Curry leaves - 1 tbsp
  7. Broken cashewnuts - 1 tsp
  8. Grated carrot - 1/4 cup
  9. Grated capsicum - 2 tbsp
  10. Corrainder leaves 
  11. Salt to taste
  12. Oil - 1 tsp
  13. Mustard seeds - 1 tsp
  14. Channa dal - 1/2 tsp
  15. A pinch of hing
  16. Coconut powder - 1 tbsp
  17. Oil for greasing the paniyaram pan

Method :

1.   Heat oil in the pan, add channa dal, mustard seeds, curry leaves & a pinch of hing.  

2.   Mix all the ingredients together along with the seasonings.  Adjust the salt to taste.

3.   Drizzle oil in the paniyaram pan & pour the batter in each hole till 3/4th filled.

4.   Once one side is done, flip the paniyaram.  Remove from pan when done.

Serve with chutney.

Egg milkshake - Healthy drink

Healthy & rich drink perfect during breakfast time.  My weekend always start with a cup of egg milk for my son.  Its really nutricious & healthy for kids.

Ingredients :
  1. Egg - 1 no
  2. Milk - 1/2 cup
  3. Sugar to taste

Method :

1.   Beat the egg & keep aside.

2.  Boil the milk & slowly pour it in the egg.  Keep beating the egg continously.

3.   Add sugar to taste.

Chicken & potato in the spicy coconut gravy (Chicken kuruma)

Rich, creamy & delicious chicken gravy is the perfect side dish for chicken biryani, rotis & rice too. Potatoes are one among of the few vegetables goes great when cooked with any kind of non-veg varieties.  Chicken & potatoes are cooked together in the spicy coconut masala and seasoned with classic indian spices.  Good weekend menu :)

Ingredients :
  1. Chicken - 1 kg
  2. Oil - 1 tbsp
  3. Cinnamon stick - 1 inch
  4. Cloves - 2 nos
  5. Onion - 1 large sized
  6. Potatoes - 2 nos 
  7. Ginger garlic paste - 1 tbsp
  8. Turmeric powder - 1/2 tsp
  9. Chilly powder to spice
  10. Salt to taste
  11. Corriander leaves for garnishing
For the paste :

Grind the below ingredients to smooth paste.
  1. Grated coconut - 1/2 cup
  2. Black pepper corns - 1 tbsp
  3. Fennel seeds - 1 tsp
  4. Cashewnuts - 1 tbsp
  5. Tamarind pulp - 1 tsp

Method :

1.   Cut the potatoes & keep aside.

2.   Heat oil in the heavy bottomed pan, add cinnamon stick & cloves.

3.   Add finely chopped onions & saute till tender.  Add ginger garlic paste, turmeric powder & potatoes.  Saute.

4.   Add chilly powder, chicken pieces & saute.

5.   Add the grounded masala & salt to taste.  Cook till done.

Garnish it with corriander leaves & serve.
